Asian Slaw
Asian slaw is excellent served as a side dish or a light lunch salad. It can even be used as a filling in a veggie wrap or a spring roll.

- 1 medium head of Savoy cabbage thinly sliced
- 1 medium carrot peeled and grated
- 1 red bell pepper seeded and julienned
- 4 ounces snow peas julienned
- 4 green onions trimmed and thinly sliced
- ¼ cup chopped fresh cilantro
- ½ cup plain yogurt low-fat or fat-free (do not use Greek yogurt)
- 1 tablespoon plus 1 teaspoon sesame oil
- ¼ cup low sodium soy sauce
- 2 tablespoons Dijon mustard
- 2 tablespoons freshly squeezed orange juice
- 2 tablespoons minced pickled ginger
- Sriracha Hot Chili Sauce to taste
In a large bowl toss the cabbage, carrot, bell pepper, snow peas, green onions, and cilantro until combined; set aside.
In a medium bowl, whisk together the yogurt, sesame oil, soy sauce, mustard, orange juice, and pickled ginger until combined. Pour the dressing over the cabbage mixture and toss until thoroughly combined. Season with Sriracha sauce to taste. Enjoy!
- Savoy cabbage lends a nice texture, but it can be substituted with green cabbage.
- Use plain yogurt, not Greek yogurt.
