Bacon, Fig, and Arugula Sandwiches

- 1 baguette 22 inches in length
- Extra-virgin olive oil
- 4 tablespoons fig preserves
- 16 slices thick-cut, cooked bacon
- 1 (5-ounce) container of crumbled goat cheese
- 2 cups loosely packed arugula or more to taste
- 2 tablespoons whole-grain mustard
Slice the baguette into four equal sections and cut each piece in half horizontally. Place the slices on a rimmed baking sheet, cut side up, brush the cut sides with oil, and broil under the broiler element until lightly toasted; allow to cool slightly.
For each sandwich, spread 1 tablespoon of fig preserves, then layer 4 slices of bacon, 2 tablespoons of goat cheese, and ½ cup of arugula on the bottom halves. For the top halves, spread 1 ½ teaspoons of mustard before placing them on top of the arugula. Serve immediately or wrap the sandwiches in plastic wrap and refrigerate until ready to serve. Enjoy!
