2ripe red mangoesseeded, peeled, and cut into a ½-inch dice
115 ounce can of black beansdrained and rinsed
½cupfinely diced red onion
1jalapeñostemmed, seeded and finely diced
2tablespoonschopped fresh cilantro
2tablespoonshoney
¼cupfreshly squeezed lime juice
Kosher salt and freshly ground black pepper to taste
Instructions
In a medium bowl, combine the mangoes, black beans, red onion, jalapeño, and cilantro. Add the ground cumin, honey, and lime juice. Mix well. Season to taste with salt and pepper. Enjoy!
