Coq au Vin is best enjoyed the day it is made, but can be made one day in advance. Store and cover the chicken, vegetables, and sauce separately. The next day, preheat the oven to 275°F. Place the chicken, vegetables, and sauce in an oven proof dish (do not overcrowd). Heat for 2- 2 1/2 hours or until the internal temperature of the chicken is 165°F.
