Green Salad with Apples and Blue Cheese Vinaigrette

- 2 heads Bibb lettuce washed, dried, and torn into pieces
- 2 generous handfuls of mixed greens (about 2 ounces) washed and dried
- 1 large Granny Smith apple cored and thinly sliced or cut into matchsticks
- 4 tablespoons Safflower oil or other neutral oil
- 2-3 tablespoons white wine vinegar
- 1 medium shallot finely minced
- 1 teaspoon Dijon mustard
- Pinch of granulated sugar
- 1 ounce good quality creamy blue cheese
- kosher salt and freshly ground black pepper to taste
In a medium bowl, whisk together the oil, vinegar, shallot, mustard, and sugar. Crumble in the blue cheese and mash slightly with the back of a fork; whisk again. Toss the lettuce and greens along with the apple. Pour the vinaigrette over the green mixture and toss to combine. Serve immediately. Enjoy!
