The Biga does require 8-10 hours of rising, but you can omit this step and make the ciabatta in one day. Stir together all of the water (2 cups) and all of the yeast (3/4 teaspoon) until the yeast is dissolved. Then add all of the flour (5 cups) and the salt. Mix and knead as directed in the final dough. Rising and baking times remain the same.
