- 2 garlic cloves peeled
- ½ cup packed fresh cilantro
- 1 ½ teaspoons anchovy paste
- 1 large ripe avocado pitted and peeled
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons freshly squeezed lemon juice
- ½ cup sour cream regular or low -at
- ¼ cup freshly grated Parmesan cheese
- 1 teaspoon Extra-virgin olive oil
- ¼ teaspoon Worcestershire sauce
- Kosher salt and freshly ground black pepper
With the Food processor running, drop the garlic and cilantro into the feed tube and process until the garlic is finely chopped. Scrape down the sides of the bowl. Add the avocado, lime juice, lemon juice, and sour cream. Pulse to break up the avocado and allow it to come into direct contact with the citrus juices, which helps prevent oxidation. Scrape down the sides of the bowl again.
Add the Parmesan, Worcestershire, and olive oil. Process until blended and smooth with green cilantro flecks. Season to taste with kosher salt and freshly ground black pepper. Serve. Enjoy!
Use as a dip, spread it, or thin it with a little water for a dressing.
Store the crema in an airtight container in the refrigerator for up to 3 days. Bring to room temperature for the fullest flavor.
