Ingredients

  • 2 ounces (about 2 cups) lightly packed baby arugula
  • 2 cups (about 9 ounces) cherry tomatoes halved
  • 1 ½ cups (about 6 ounces)) seedless watermelon cut into ½-inch dice
  • 2-3 mini cucumbers halved lengthwise and cut into ½-inch moons
  • 3 ounces crumbled feta cheese
  • 8 fresh basil leaves torn (about ¼ cup)
  • 1 tablespoon Extra-virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • kosher salt and freshly ground black pepper to taste

Instructions

  • Place the arugula, tomatoes, watermelon, cucumber, and basil in a large bowl. In a small bowl, whisk together the olive oil and vinegar. Drizzle the dressing over the salad. Add the crumbled feta and gently toss to combine. Season to taste with salt and pepper. Enjoy!
