Ham, Cheddar, and Apple Butter Tartine

- 6 (½-inch) thick slices of good Country Bread
- 2 tablespoons of unsalted butter softened
- ⅓ cup apple butter homemade or store bought
- 2 tablespoons Dijon mustard
- 2 tablespoons grainy Dijon mustard
- 1 ½ pounds Black Forest Ham thinly sliced (I use Boar's Head)
- 12 ounces extra-sharp white Cheddar cheese freshly grated
- 2 tablespoons chopped fresh chives
Place oven rack to highest position and preheat the broiler. In a small bowl combine the mustards and set aside.
Butter 1 side of each slice of bread with the butter. Place on a baking sheet. Broil until the bread begins to brown, about 2 minutes. Remove from the oven and spread the mustard mixture evenly over the toasted bread. Spread the apple butter evenly over the mustard. Layer the ham and the top with the cheese slices. Return the baking sheet to the oven and broil until the cheese melts and begins to brown in some spots, about 2 minutes. Remove from the oven and sprinkle with chives. Serve immediately. Enjoy!
