Equipment

Ingredients

  • ¼ cup peanut butter
  • cup pumpkin purée homemade or store-bought
  • 2 extra-large eggs at room temperature
  • 3 cups whole wheat flour

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper; set aside
  • In a bowl of a stand mixer fitted with the paddle attachment, beat together the peanut butter, pumpkin and egg until well combined (about 2-3 minutes). Reduce mixer speed to low and add the flour a ¼ cup at a time until dough is no longer sticky; adding more flour if needed. Dough will separate from the sides of the bowl when ready.
  • Transfer the dough to a lightly floured surface. Using a rolling pin, roll dough out to a ¼ inch thickness and cut using a cookie cutter into the shapes you want and prick each piece with the tines of a fork; place on baking sheet.
  • Bake for 25 minutes or until the edges start to brown. Allow to cool completely and let your four legged companions enjoy!
