Sea Salt Roasted Chickpeas

- 1 (15-ounce) can chickpeas drained and rinsed
- 1 tablespoon Extra-virgin olive oil
- ½ teaspoon coarse sea salt (I use Maldon)
Preheat the oven to 400℉. Line a rimmed baking sheet with a silicone mat or parchment paper.
Spread the chickpeas on a flour sack or kitchen towel. Fold the towel over the chickpeas and gently rub them back and forth to remove excess moisture. Discard and loose skins.
Place the chickpeas in a medium bowl. Add the olive oil and sea salt, and toss to coat. Spread the chickpeas on the prepared baking sheet and bake for 30-40 minutes, shaking the baking sheet halfway through, until golden brown.
Remove the baking sheet from the oven and place it on a wire rack. Allow the chickpeas to cool completely on the baking sheet. (The chickpeas will continue to crisp as they cool.) Transfer the chickpeas to a serving bowl or store in an airtight container for up to 2 days. Enjoy!
