  1. Place the chickpeas in a flour sack or kitchen towel. Fold the towel over the chickpeas and gently rub them back and forth to thoroughly dry them. Remove any loose skins.
  2. Transfer the chickpeas to a bowl and season with the olive oil and sea salt.
  3. Place the chickpeas on a silicone or parchment-lined rimmed baking sheet. The rimmed baking sheet is essential so the chickpeas don’t roll off when they are being shaken and baked.

Variations of Roasted Chickpeas

  • Flavored salts: I use plain Maldon Sea Salt, but you can also try using one of their flavored salts, such as garlic or smoked salt.
  • Spicy and Smokey: Add cayenne pepper, chili powder, or smoked paprika to boost the flavor and add some heat.
  • Sweet: Add a touch of maple syrup and cinnamon prior to roasting.
  • Lemon Pepper: Add your favorite lemon-pepper seasoning.
  • Ranch: Add your favorite ranch seasoning.

Sea Salt Roasted Chickpeas

Roasted chickpeas are the perfect healthy snack! Crunchy, tasty, and truly satisfying, they are packed with protein and fiber, making them a guilt-free indulgence.

Ingredients 

  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 tablespoon Extra-virgin olive oil
  • ½ teaspoon coarse sea salt, (I use Maldon)

Instructions 

  • Preheat the oven to 400℉. Line a rimmed baking sheet with a silicone mat or parchment paper.
  • Spread the chickpeas on a flour sack or kitchen towel. Fold the towel over the chickpeas and gently rub them back and forth to remove excess moisture. Discard and loose skins.
  • Place the chickpeas in a medium bowl. Add the olive oil and sea salt, and toss to coat. Spread the chickpeas on the prepared baking sheet and bake for 30-40 minutes, shaking the baking sheet halfway through, until golden brown.
  • Remove the baking sheet from the oven and place it on a wire rack. Allow the chickpeas to cool completely on the baking sheet. (The chickpeas will continue to crisp as they cool.) Transfer the chickpeas to a serving bowl or store in an airtight container for up to 2 days. Enjoy!
