Key Ingredients for Chocolate-Pumpkin Cheesecake Bars

Baking ingredients arranged on a counter, including a small pumpkin, bowls of flour, sugar, chocolate chips, butter, pumpkin puree, cream cheese, spices, vanilla, and a carton of eggs.

Cream Cheese is essential for achieving the creamy, tangy texture of the bars.

Unsalted Butter enhances the richness.

Milk Chocolate and Semi-Sweet Chocolate add a decadent, fudgy flavor.

Espresso Powder enhances the chocolate flavor.

Granulated Sugar sweetens the bars perfectly.

Unbleached All-Purpose Flour and Baking Powder provide the necessary structure and stability and help them rise.

Extra-Large Eggs act as a binding agent, adding further structure to the cheesecake. You can substitute them with large eggs.

Pure Vanilla Extract adds a lovely floral note.

Pumpkin Purée is key! You can use Homemade or store-bought with equally good results. Use any leftovers for delicious Spiced Pumpkin Muffins or Pumpkin Pancakes with Orange-Infused Maple Syrup.

Pumpkin Pie Spice is a blend of seasonal spices that adds a comforting warmth to the overall flavor. Use the spices in your cabinet to make your own Homemade Pumpkin Pie Spice!

Equipment Needed

Tips for Making Chocolate-Pumpkin Cheesecake Bars

Make sure the cream cheese and eggs are at room temperature. Make a parchment sling for the width side of the pan with overhang for easy removal.

  1. Melt the chocolate and butter in a medium bowl. Whisk together the dissolved espresso, eggs, pumpkin, and chocolate mixture. Whisk together the flour, sugar, baking soda, and salt.
  2. Fold the flour mixture into the chocolate mixture.
  3. Transfer to the prepared pan.
  4. Using a hand-held mixer, beat the cream cheese in a small bowl until smooth. Beat in the sugar, vanilla, and spices. Add the egg and beat on low speed just until combined.
  5.  Spoon over chocolate batter. Cut through the batter with a knife or toothpick to swirl the cheesecake portion. (Do not over-swirl or mix the two batters together.) Sprinkle with chocolate chips.

Substitutions and Variations

  • Substitute the milk chocolate with semi-sweet, dark, or bittersweet.
  • Substitute the regular cream cheese with ⅓- reduced fat cream cheese. DO NOT USE NEUFCHATEL because it is too soft and the cake will not bake properly.
  • Add a small amount of chopped nuts or dried fruit to the chocolate batter,

Serving Suggestions

With the addition of espresso powder, these bars pair nicely with a cup of coffee or a glass of cold milk. They are also a wonderful addition to a fall or holiday dessert table.

Can I halve the recipe?

Absolutley! Use an 8×8-inch baking pan. You will need 2 ½ tablespoons plus ½ teaspoon of butter for the chocolate batter.

Can I make these ahead of time?

Yes. Once cooled, store them in the refrigerator uncut until ready to serve.

Can I use regular-size chocolate chips instead of mini?

Of course! You can also experiment with different flavored chips like white chocolate or cinnamon.
