I have a few more Irish themed recipes to share before St. Patrick’s Day. The first thing that comes to my mind when thinking of Irish cuisine is oats. I know, exciting, right? It probably has something to do with the box of McCann’s Irish Oatmeal that I keep in the cupboard and use at least once a week. A recipe for oatmeal seems almost silly to share, because like deviled eggs for instance, many of us seem to wing it and use a little bit of this and a little bit of that. Having said that, I feel this is a pretty tasty recipe and certainly blog worthy enough to share with those of you who like and/or need to follow a recipe. You can use as much or as little maple syrup and brown sugar as you like. I generally go with the full 2 teaspoons of syrup and brown sugar, then top with toasted almonds and some chopped dried fruit, like apricots and cranberries for added texture and flavor. 

This simple recipe makes for a bowl of oats packed with flavor and energy for whatever you might need to tackle during the day. The health benefits of oatmeal are known to all as a cholesterol reducer and a great broom of the system (thanks D. F. Wallace).

Maple Brown Sugar Oatmeal

Cozy up to this bowl of quick and easy oats instead of ripping open a store-bought packet. It's sweet, creamy, and full of goodness!

Ingredients 

  • 1 cup water
  • ½ cup quick cooking oatmeal
  • Pinch of Kosher salt
  • 1 ½ to 2 teaspoons packed light brown sugar
  • 1 ½ to 2 teaspoons pure maple syrup

Instructions 

  • In a small saucepan, bring the water to a boil. Stir in the oatmeal and cook for 1 minute over medium heat or until thickened. Remove from the heat, cover, and rest for 2 minutes. Stir in brown sugar and maple syrup to taste. Enjoy!

    Mmm I, too, love McCanns and that texture of steel cut oats. I keep a pot in the fridge for the week, and I add brown sugar or, when I'm feeling in the mood for Asian, a combo of soy sauce, sesame oil, sesame seeds, and maybe an egg!
