Substitutions

  • Use a whole wheat baguette for the crostini.
  • Substitute avocado oil for the olive oil.
  • Substitute turkey bacon, plant-based bacon, or store-bought bacon for the smoked bacon.
  • Use pre-crumbled blue cheese and store-bought dressing.
  • If cherry tomatoes aren’t available, try 1 or 2 Roma tomatoes, seed them, and finely dice them.

Blue Cheese Wedge Salad Crostini

These Blue Cheese Wedge Salad Crostini are party-perfect appetizers or snacks!

Ingredients 

  • 12 slices French baguette, sliced ½-inch thick
  • Extra-virgin olive oil, for brushing
  • Garlic powder, for seasoning
  • 2 cups chopped Iceberg lettuce
  • 4 slices Hickory-smoked bacon, cooked and chopped
  • 2-3 tablespoons crumbled blue cheese
  • 1 tablespoon creamy blue cheese dressing
  • 12 cherry tomatoes, cut in half

For the Garnish

  • 2 tablespoons finely chopped fresh chives
  • Freshly ground black pepper

Instructions 

For the Crostini

  • Heat oven to 350℉. Place baguette slices on a baking sheet, brush with olive oil, and season lightly with garlic powder. Bake until lightly toasted, 8-12 minutes. Remove from the oven and let cool on the baking sheet.
  • Meanwhile, toss lettuce, tomatoes, bacon, and blue cheese in a small bowl, then dress with blue cheese dressing. Top each crostini slice with the salad mixture, then garnish with chives and freshly ground black pepper. Serve immediately. Enjoy!
