Reduced-sodium Soy Sauce is a lower salt alternative to traditional soy sauce. It adds a rich flavor while maintaining a balanced saltiness, allowing other components, such as ginger and vinegar, to stand out.
Unseasoned Rice Wine Vinegar has a mild, slightly sweet flavor, free of added salt, sugar, and other seasonings. Its versatile acidity blends well with the other ingredients without overpowering the overall taste of the sauce.
Ginger Root has a fragrant, almost lemon-like scent and zesty taste.

Tips for Making Ginger-Soy Sauce with Scallions
*The sauce is so easy to make! Just add everything to a bowl and stir to combine.
- An easy way to peel ginger root without taking away too much of the flesh is to use the thin edge of a fine spoon. Turn the spoon upside down and use the edge to gently scrape away the skin.
- To release as much flavor and essential oil as possible, I use a Fine Microplane. Then I use the spoon to scrape the ginger flesh off the back of the grater.
Serving Suggestions
This Ginger-Soy Sauce with Scallions complements nearly every dish! It’s an ideal partner for fish, shellfish, beef, chicken, and pork. It’s fantastic drizzled over rice, noodles, or steamed vegetables and makes a delightful dipping sauce for a variety of foods, such as sushi, California rolls, egg rolls, and Shrimp and Ginger Dumplings.

Substitutions
- Seasoned rice wine vinegar may be used, but you will need to reduce the amount of sugar.
- Sriracha or red pepper flakes can be used in place of the Sambal Oelek. The flavor of the heat is a personal preference. It can be adjusted to taste or omitted.
- You can substitute the reduced-sodium soy sauce with regular soy sauce, but keep in mind the sauce will taste saltier. You may need to adjust the quantity used to prevent the saltiness from dominating the flavor.
- You can also substitute the soy sauce with Coconut Aminos for a soy-free, gluten-free alternative.

Ginger-Soy Sauce with Scallions

Ingredients
- ¼ cup reduced-sodium soy sauce
- ¼ cup unseasoned rice vinegar
- ¼ cup water
- 2 ½ teaspoons granulated sugar
- 1 medium scallion, roots trimmed and sliced thin
- 2 teaspoons finely grated fresh ginger, on a microplane
- 1 ½ teaspoons toasted sesame oil
- 1 teaspoon Sambal Olek, or to taste

- In a small bowl, combine all of the ingredients, gently stirring to dissolve the sugar. Enjoy!
