Kitchen Tip
When I’m preparing a meal for a large group or multitasking on several components, I chop up cooked, deboned chicken into sizable pieces and put them in the bowl of my stand mixer, fitted with the paddle attachment. A quick spin on medium-low speed is perfect for shredding everything.


I use my Roast Chicken when I need a whole chicken, but a store-bought rotisserie chicken will work in a pinch. Boneless chicken breasts and thighs, which are cooked separately for a recipe, also work well.
